Grilled Pizza with Tomatoes, Basil, and Artichoke (Dave Lieberman)
This recipe is great for an appetizer when you are having a few friends over. My friends LOVED this one. Dave made his own dough, but to make it easier just use store bought dough and roll it out or to make it even easier use ready made pizza dough. While heating a grill pan (medium high) combine in a bowl the tomatoes, basil, artichoke, and just enough artichoke marinade to coat the mixture - salt and pepper to taste. Let mixture sit while you grill your dough. Make sure to coat the pizza dough with a little extra virgin olive oil before placing on the grill pan. Lightly char the dough on both sides (about 2-4 minutes). When it's done scatter mixture over the dough and top with a little more basil, and some parmesan cheese.
